Chorizo, Crawfish & Cheese Empanadas

Warren, still on a creative empanada kick, decided to mix crawfish, chorizo, blue cheese, and Mexican cheese together and fry it up for a gathering at the Dixon's on Friday. Short on time (or buoyed by my sushi making ability last Wednesday) he actually let me assist with the empanada construction.
